How can I make an override vor ProfileController.php (Joomla Core) in /com_users/src/Controller

Hi there.
The only way I see it is to edit that file in the same path, make comments, and when that file is modified in an update you can integrate your modification back.

I don't know what you want to achieve by editing the controller, so I can't say there's another solution, and these files can't be overridden from a template.
